Summer Radiance Salad with Fruity Vinaigrette.
Ingredients:
Salad Base:
2 cups baby spinach or mixed salad leaves
½ cup rocket or coriander.
1 small cucumber, sliced
½ avocado, cubed
¼ cup crumbled feta or goat cheese (optional)
¼ red onion, finely sliced
1 tbsp chopped fresh mint or basil
Summer Fruits (choose 2–3):
½ cup fresh strawberries, halved
½ cup blueberries or blackberries
½ orange, peach or nectarine, thinly sliced
A few seedless grapes, halved (optional)
Pomegranate seeds for extra sparkle (optional)
Crunchy Toppings:
1 tbsp pumpkin seeds or sunflower seeds
1 tbsp chopped walnuts or pecans (lightly toasted)
Fruity Vinaigrette:
3 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp honey or maple syrup
1 tsp Dijon mustard
2 tbsp mashed raspberries or strawberries (for colour and tang)
A pinch of sea salt and black pepper
Optional: squeeze of fresh lemon or orange juice for extra brightness.
Method:
Whisk or shake all ingredients in a jar until emulsified. Taste and adjust sweetness/acidity as needed.
To Serve:
Toss the salad ingredients gently with the vinaigrette just before serving.
Garnish with fresh mint, edible flowers (like nasturtium or calendula), and an extra drizzle of dressing if desired.
